Any root vegetable will work beautifully in this recipe. They purée to a smooth consistency, and have a mild flavour that babies love.
Makes 5 portions | Prep time 10 minutes | Cooking time 20 minutes | Suitable for freezing | Provides beta-carotene, vitamin C, vitamin E, fibre
Ingredients:
1 large carrot, peeled and diced
1 small sweet potato (about 250g/9oz), peeled and diced
1 small parsnip, peeled and diced
Method:
1. Put the vegetables in a steamer set over boiling water. Cover and steam for 20 minutes until soft.
2. Purée until smooth in a food processor or place in a bowl and use a hand-blender, adding a little water from the steamer to get the right consistency.
3. Freeze in individual portions. To serve, thaw overnight in the fridge or for 1–2 hours at room temperature, then microwave or reheat in a small pan until piping hot. Stir and allow to cool before serving.
